After much consideration and try-outs trying to create a simple low poly model with Maya Autodesk myself to design animations and develop the character from there I can conclude that trying to create the character from scratch will be much too time consuming.
Suggestions:
We can search for assets in the unity store or other sources for character models that fit our purpose
We can simply use a cube as a character for now

I suggested the possibility of simply just using a cube, not only for simplicity, but maybe we can turn it into a feature as well - think of it as CubeFigureFight rather then StuckFigureFight ?
AddOns to this character design would be following ideas:
Cube has 100 % health at start
when Cube is damaged -> Cubes health will be diminished by a certain amount + possible feature: Cube size will shrink, health will be dropped to the floor other Cubes can pick it up to heal/gain health percentage
