Use more concise naming on project yaml files

The first draft of the new project documentation scheme (using yaml files) used regex magic to directly translate column names from the original excel file. Many of these are long and cumbersome, they should be made more concise.

Examples:

• Instead of email_of_developer_maintainer_or_key_contact use contact_email
