Change logging code to be entirely independent of ESP

I copied the logging header from the ESP/IDF code and did not change any of the definition name there. This means that there can be conflict and this is obvious in the Arduino port where the variable LOG_LOCAL_LEVEL is defined in the ESP headers.

I want the RinaSense logging code to be independent of what is defined in the ESP/IDF.
