Suggest / Add instructor notes for Episode 8: Writing Transformations

Following the transition to the new Workbench, instructor notes can be integrated into episodes/lessons. This issue is for

Episode 8: Writing Transformations

Some notes could be copied from the existing notes, but this is also a good opportunity to make sure we have all appropriate instructor notes in place so we can use this issue for suggestions for any additional notes that should also be added.

Making a change like "toTitlecase" has the effect of:

• some of the example data's inaccuracies become more visible :-)
• But also the incorrect capitalisation of Genus species :-(

Add instructor note to indicate this so that the instructor can highlight the issue that tools like OpenRefine are extremely powerful but just because you can do something doesn't necessarily mean you should do it. (see existing note in the guide.md)
