Is there a way to create a profile variable to pull SteamID (in the STEAM_1:0:0000000 format)
The profile variable $steamprofile['steamid'] returns SteamID64, but I really need the traditional SteamID, if possible to add

You can use an external library for conversion, for example https://github.com/DoctorMcKay/php-steamid
