Using albert you can connect to a VPN already added to the network manager (using only the keyboard).
Go to Albert - Settings - Extensions - Python - VPN
Then you simply put in albert search "vpn " and you would see all the VPN that have already been added, select one.
Maybe you could add this to the README.

Well. In my case, that is not the behavior that eOVPN has in my system (and I like how in my system behaves). I have added multiple VPN connections from eOVPN to my NM, and they continue to appear in my NM. So, in my case, it does not delete the VPN connections.
