The GTFS Realtime 'Changes' page lists recently merged PRs, and links to another page for a "complete Revision History".
This refers to https://gtfs.org/realtime/process/#revision-history where the last documented change dates from March 12, 2020.
As a supplier of software systems that consume GTFS Realtime feeds, we would like to specify to our customers what "version" of the GTFS Realtime specification we support. Currently we cannot refer to a specific date of the revision history. What can we do to refer to a specific version, besides specifying commit IDs in the google/transit repository?

Thanks for bringing this up. As you know, there will be work done to improve the revision history on the GTFS repo (google/transit) and on GTFS.org which pulls information from the GTFS repo.
As for versioning, currently GTFS does not have versioning but there are conversations on google/transit about it. Check out #288 on google/transit we just re-opened it as this topic has been resurfacing.
