assets/manifest.jsoncontains Liquid tags (e.g.,{{ '/' | relative_url }}) but the file has no front matter, so Jekyll will likely publish the tags literally instead of rendering them. That results in an invalid/incorrect web app manifest (start_url,scope, and iconsrcvalues won’t resolve).
