ezquake no longer has checked in Visual Studio project, so swap to cmake. As there's no need to do anything other than compile checking, pick Linux as that's fastest. Same simplification for mvdsv. Something that does add value is that protocol.h is now checksumed before build runs, and checksum is verified after build to avoid risk of build system updating the submodule as part of the build.
