[TST]: update test_persist to create 1+ collections

Description of changes

Updates test_persist to test persisting potentially multiple collections. This is to prevent introducing bugs like #2923 in the future.

I ran this new test against 0.5.12 and Hypothesis easily caught the bug.

• Tests pass locally with pytest for python, yarn test for js, cargo test for rust
