We have a convention of model- or dataset- ... perhaps we name this model-converter-huggingface-gguf

Maybe I should move this as a standalone image? I feel like people could use this by itself without substratus as well.

Do you mean standalone repo? I would prefer to keep our images in the same repo. I think most all of our images could be used outside of substratus.
